ORIGIN OF INDUSTRIALIZED HAMBURGERS

The consumption of minced or shopped, seasoned and grilled meat occurs in the mankind for a long time. The compilation Apicius about meals in the ancient Rome reveals a recipe of grilled minced meat, made with bread soaked in wine and seasonings. Several records from the 18th century demonstrate that the minced meat steak, fried or grilled, was already served as a practical and economic food, to be made at homes as meals served in dishes or as a sandwich. The interest in hamburger marketing led to the mechanization of its production and its popularization, in the 20th century, with the emergence of snack bar franchising and the product industrialization.

In the last decades, there was a wide modernization in the hamburger industry, comprising the use of new process technologies, processes, ingredients and packages. Large-scale operations allowed offering a wide variety of products at affordable prices, making the industrialized product an economical and nutritive option for meals.
