Water is a natural ingredient and air can be incorporated in the processing of determined types of products

When an industrialized food incorporates water or air, it is because the product preparation requires it. For example, to make bread, cookies, cakes and doughs, it is necessary to mix wheat and water. Whole juice does not have water added, except when prepared from juice concentrates. Water is the basic raw material for nectars, refreshments and other beverages. In ice cream processing, whether at the industry or ice-cream parlors, it is natural to incorporate air, as well as in the aerated chocolates.

Bread

In 2019, Ital and ABIMAPI conducted a study about nutrients and ingredients of 70 products marketed in Brazil, obtained the following results. Basically, industrialized bread is made with flour, water, salt and yeast. It is natural to use water and to incorporate air to the dough to make bread. Water and yeast need to be added in industrialized bread to release gas, which leaves the dough “full-bodied”, as well as all the other loaves of bread made at bakeries and homes. Therefore, the incorporation of air and water in the dough is the base for a bread dough preparation.

Cookies

In 2020, Ital and ABIMAPI conducted a study about nutrients and ingredients of 243 products marketed in Brazil, obtained the following results. To make cookies, a reduced quantity of water is used, which will be practically evaporated at baking. And the yeast, with the gas releasing, leaves the dough slightly porous, with the minimum presence of air, which is natural.

Cakes

In 2021, Ital and ABIMAPI conduced a study about nutrients and ingredients of 210 products marketed in Brazil, obtained the following results. Water is the basic raw material incorporated in cakes manufacturing, both at bakeries or homemade cooking. Water and yeast need to be added in industrialized bread to release gas, which leaves the dough “full-bodied”.

Doughs

In 2021, Ital and ABIMAPI conducted a study about nutrients and ingredients of 269 products marketed in Brazil, obtained the following results. Water is the basic raw material incorporated in dough manufacturing, both in the industry, restaurants, or home cooking.

Pizzas

In 2020, Ital and ABIA conducted a study about nutrients and ingredients of 56 products marketed in Brazil, obtaining the following results. Water is the basic raw material incorporated in pizzas manufacturing, both in the industry, pizzerias, or home cooking.

Yogurt

In 2020, Ital and Viva Lácteos conducted a study about nutrients and ingredients 150 56 products marketed in Brazil, obtaining the following results. Water is not a ingredient estimated for the category, except when used to reconstitute powder (reconstituted milk), in syrups (sugar syrup) or when it is allowed in ingredients that compose yogurt (in fruit preparations). Water is added in order to rehydrate powdered milky products when used to replace liquids, for example, powdered milk or powdered whey. Air is not included as an ingredient in the products of the analyzed sample.

Plant-based beverages

In 2022, Ital and Good Food Institute conducted a study about nutrients and ingredients of 178 products marketed in Brazil, obtaining the following results. Water is the basic raw material of many different types ob beverages, industrialized or not.

Juices and other non-carbonated beverages

In 2020, Ital and ABIR conducted a study about nutrients and ingredients of 217 products marketed in Brazil, obtaining the following results. Juices 100% do not have water added. Water is a basic ingredient for nectars, fruit refreshments,industrialized or not, and is also naturally present in fruits and vegetables.

Ice cream

In 2021, Ital and ABIS conducted a study about nutrients and ingredients of 180 products marketed in Brazil, obtained the following results. Water is a basic ingredient in fruit and milk ice creams, which is already naturally present in these ingredients. Air is incorporated in all the ice creams during mixing and freezing, and can occur naturally by the mixing process or by mechanical incorporation, being important for its texture.

Hamburgers

In 2021, Ital and ABIA conducted a study about nutrients and ingredients of 90 products marketed in Brazil, obtaining the following results. Air is not a raw material used in manufacturing industrialized hamburger. Water is an optional ingredient, used in some products to add proteins, fat, and to give the desired texture.  During freezing, moisture can be lost and a small quantity of water is useful to load some seasonings and additives, in addition of restoring the weight lost during freezing.

Chocolates

In 2022, Ital and ABICAB conducted a study about nutrients and ingredients of 483 products marketed in Brazil, obtained the following results. Water is not a raw material incorporated in chocolate manufacturing. On the other hand, aerated chocolates are much appreciated.

Peanut

In 2022, Ital and ABICAB conducted a study about nutrients and ingredients of 416 products marketed in Brazil, obtaining the following results. Air and water are not basic raw materials in manufacturing the analyzed peanut products.
