The products can also contain ingredients intended for industrial use, but also originated from food

Industrialized food can contain food raw materials intended for industrial use, such as, for example, the addition of milk proteins (whey protein), pea, soybean, quinoa protein, etc., in order to increase the protein content of a product. However, these ingredients do not make the food a false product, or “fake”, as food raw materials of common use in home environment, restaurants, bakeries, etc., continue predominant in their composition. In addition, all of them are approved by after Anvisa analysis regarding its safety for consumption.

Bread

In 2019, Ital and ABIMAPI conducted a study about nutrients and ingredients of 70 products marketed in Brazil, obtaining the following results. Some industrialized loaves of bread can also contain food raw material designed for industrial use. O gluten is the most used ingredient, with the function of enhancing the flour and meet the technical requirements for quality in bread making. It is important to note that higher-quality flours usually do not require gluten to be addicted in the form of ingredient, as they are naturally rich in proteins that generate gluten responsible for retaining gases that make the dough to grow. In the sample analyzed, the ingredients of industrial used found were:

  • Gluten: used in 59 products
  • Sucralose: used in 3 products
  • Powdered whey: used in 3 products
  • Inulin: used in 1 product
  • Modified starch: used in 2 products
  • Hydrogenated fat: used in 9 products

Cookies

In 2020, Ital and ABIMAPI conducted a study about nutrients and ingredients of 243 products marketed in Brazil, obtained the following results. The ingredients of industrial used found were:

  • Powdered dairy: cheddar cheese (used in 3 products), yogurt (in 1 product)
  • Plant-based proteins: pea (used in 1 product), soybean (in 1 product
  • Animal-bases protein: collagen (used in 1 product), whey protein (in 1 product)

  • Modified starch: used in 1 product
  • Polydextrose: used in 8 products
  • Hydrogenated fat: used in 48 products

In 2021, Ital and ABIMAPI conducted a study about nutrients and ingredients of 1210 products marketed in Brazil, obtained the following results. The industrialized cakes marketed in Brazil, generally, are mostly composed of common food raw materials used to make home-made cakes, at bakeries and confectionery, and are mostly available to the consumer in the retail segment. In the sample analyzed, the ingredients of industrial used found were:

  • Modified starch: used in 42 products
  • Maltodextrin: used in 26 products
  • Hydrogenated fat: used in 48 products
  • Inverted sugar: used in 41 products
  • Fructose: used in 2 products
  • Fibers: wheat (in 8 products), oat (used in 2 products), orange (in 6 products), dietary fiber (in 5 products) e polydextrose (in 41 products)

Dough

In 2021, Ital and ABIMAPI conducted a study about nutrients and ingredients of 269 products marketed in Brazil, obtained the following results. The industrialized doughs marketed in Brazil, generally, are mostly composed of common food raw materials used to make home-made crusts, at bakeries and confectionery, and are mostly available to the consumer in the retail segment. In 2020, Ital and ABIA conducted a study about nutrients and ingredients of 217 products marketed in Brazil, obtained the following results. The industrialized pizzas are mostly composed of common food raw materials used to make pizzas in other places, are mostly available to the consumer in the retail segment. In the sample analyzed, the ingredients of industrial used found were:

  • Wheat fiber: used in 2 products
  • Pizza topping: used in 17 products
  • Pea protein concentrate: used in 3 products
  • hydrolyzed soybean protein: used in 2 products
  • Modified starch: used in 6 products

Yogurt

in 2020, Ital and Viva Lácteos conducted a study about nutrients and ingredients of 150 products marketed in Brazil, obtained the following results. The industrialized yogurts are mainly composed of common food raw materials used to make yogurts in other places, mostly available to the consumer in the retail segment. Normative Instruction no. 46, of October 23rd, 2007, Ministry of Agriculture, Livestock and Supply, established which ingredients shall be mandatory (Milk and/or reconstructed milk standardized in its fat content; culture of specific lactic bacteria) and the optionals (Milk concentrate, cream, butter, anhydrous milk fat or butter oil, powdered milk, food caseinates, milk protein, other solid of milk origin, wheys, whey concentrate; Fruits in pieces, pulp(s), juice(s) and other fruit-base preparations; Maltodextrins; Other food substances, such as: honey, coconut, cereals, vegetables, dried fruits, chocolate, spices, coffee, others, alone or combined; Sugar and/or glycides (except polyalcohols and polysaccharides); Culture of subsidiary lactic bacteria; Starch or modified starch in a maximum portion of 1% (m/m) of the final product) in the composition of yogurt.

In the sample analyzed, the ingredients of industrial used found were:

Plant-based beverages

In 2022, Ital and Good Food Institute conducted a study about nutrients and ingredients of 178 products marketed in Brazil, obtaining the following results. The industrialized plant-based beverages are mostly composed of common food raw materials, and most of them are available to the consumer in the retail segment.

  • Fat-based mix: used in 2 products
  • Plant-based proteins (pea, soy, fava beans and isolated soybean): used in 33 products
  • Isolated soybean protein-based mix: used in 5 products
  • Liquid sugar: used in 1 product
  • Modified starch: used in 2 products
  • Maltodextrin: used in 9 products
  • Fibers (oat, chicory, inulin, Polydextrose): used in 24 products
  • Source of calcium (calcium carbonate, algae calcium carbonate, algae calcium and natural calcium): used in 51 products

Juice and non-carbonated beverages

In 2020, Ital and ABIR conducted a study about nutrients and ingredients of 217 products marketed in Brazil, obtaining the following results. Industrialized juices are composed mainly of common food raw materials used to make juices at homes and restaurants. The main ingredients that form the industrialized juices liquid volume are:

  • Vitamins (A, B2, B3, B6, B9, D or E): used in 30 products
  • Minerals (iron, zinc, calcium or selenium): used in 20 products
  • Acacia gum (INS 414): used in 2 products
  • Inulin: used in 10 products
  • Polydextrose (INS 1200): used in 1 product
  • Frutooligosaccharides – FOS: used in 4 products
  • Spirulina: used in 1 product
  • Microalgae oil (omega 3): used in 4 products
  • Maltodextrin: used in 3 products
  • Orange cells: used in 1 product

ice creams

In 2021, Ital and ABIS conducted a study about nutrients and ingredients of 180 products marketed in Brazil, obtaining the following results. The industrialized ice creams are mostly composed of common food raw materials, and most of them are available to the consumer in the retail segment. The ingredients used in industrialized ice cream can be divided in three groups: basic, optional and additions. The basics are water, milk, whey, plant-based proteins, animal-based and plant-based fat, and sugar. Optional ingredients are cocoa, coconut milk, fruit, coffee, yogurt, etc., used in the ice cream mass to contribute with the flavor, texture, in addition to nutritional enrichment. And additions make the ice cream more indulgent, adding value and flavor to the product. In the sample analyzed, the ingredients of industrial used found were:

In 2021, Ital and ABIA conducted a study about nutrients and ingredients of 90 products marketed in Brazil, obtaining the following results. The industrialized hamburgers are mainly composed of common food raw materials used to make hamburgers in other places, mostly available to the consumer in the retail segment. The main ingredients that form the industrialized hamburgers base are:

  • Plant-based protein concentrate: used in 44 products
  • Collagen: used in 13 products
  • Gluten: used in 9 products

In 2022, Ital and ABICAB conducted a study about nutrients and ingredients of 483 products marketed in Brazil, obtaining the following results. Industrialized chocolate products, generally, are mainly composed of common food raw materials. In the sample analyzed, the ingredients of industrial used found were:

In 2022, Ital and ABICAB conducted a study about nutrients and ingredients of 416 products marketed in Brazil, obtaining the following results. The industrialized peanut products, generally, are mostly composed of common food raw materials, and most of them are available to the consumer in the retail segment. In the sample analyzed, the ingredients of industrial used found were:

  • Prepared spices: Prepared spices (onion flavors, onion and herbs flavor, chipotle chill flavor, Mexican pepper flavor, red pepper flavor, bacon flavor, mustard flavor and lemon pepper or lemon and pepper flavor): used in 18 products.
  • Whey: used in 20 products.
  • Milky compound: used in 1 product.
  • Inverted sugar: used in 13 products.
  • Olein: used in 39 products.
  • Fractionated plant-based fat: used in 2 products.
